Trofeo Estate Pinot Gris

Winemaking - All grapes were hand harvested on 27th February. The picking date was selected based on analysis and sample tasting. Grapes were whole bunch pressed to 550L/t where the first cut was made. The second cut, or pressings, were kept separate. Juice was settled for 2 days then racked to tank where it was inoculated for fermentation. The ferment temperature was kept around 15OC until the baumé dropped to about 4 from where it was left to ferment without cooling. Wine was then racked, fined with bentonite and filtered ready for bottling.
 
Tasting Notes - Our 2015 cool climate Pinot Gris is all about green pears and white nectarines. This is a fruit driven white wine with a delightfully complex structure, fresh acidity and great length of flavour. Enjoy now with sunshine and charcuterie, or cellar for up to 5 years.
