This Pinot Noir shows an abundance of red cherry and poached plum aromas, with subtle clove and cinnamon spice complementing in the background.
The grapes were sorted then destemmed and fermented in small open fermenters using indigenous yeast, minimal hand plunging, spending 21 days on skins. The wine was bottled unfined and unfiltered.
