PALATE

The rich cassis & chocolate palate sustained by fine tannins and oak balance into a long seductive finish.  Old vines and skilled wine making contribute to a remarkable Cabernet Merlot.

VINTAGE

2012 was a pinot noir vintage for the purists – the wines across the entire region show their site characteristics very clearly, the evenness of the ripening season meant the vintage is one driven by terroir.

WINEMAKING

The Merlot was picked before the more tannic Cabernet. Both varieties were de-stemmed and fermented in small open fermenters with hand plunging used to macerate the cap and extract colour and tannin. The Merlot and Cabernet then spent 3 weeks on skins, to allow the tannins to coalesce and become softer, before pressing and transferring to barrel. Malolactic fermentation occurred in barrel and the wine was racked twice during maturation. The wine was then matured in French oak barrels for 18 months.
